Whole Chicken and Veggies in the crockpot


Whole Chicken and Veggies in the crockpot

Total cook Time: 6 hours

Total Time to Eat: 6 hours and 15 minutes


  • 2 lb whole chicken
  • 1 small onion chopped
  • 1/2 cup mushrooms  chopped
  • 4  celery stalks chopped
  • 1 zucchini sliced crosswise
  • 2 cloves garlic
  • 1 tsp dried basil
  • 1/2 tsp Himalayan salt
  • 1/2 tsp pepper
  • 2  tbsp coconut flour
  • 2 tbsp butter
  • 1/2 cup coconut milk


  • Chop  onion, mushrooms, celery and garlic.
  • Place chicken, onion, mushrooms, celery, zucchini, garlic, basil, salt, and pepper. Cook on low for 6 hours.
  • Remove chicken from slow cooker. Let cool slightly, then remove chicken from bones. Discard the bones.
  • Take liquid from slow cooker and put in medium saucepan. Add 2 tablespoons coconut flour and bring to a boil.
  • Cook until mixture thickens slightly. Reduce heat and add coconut milk, chicken, and butter.
  • Simmer for 10 minutes.
