Whole Chicken and Veggies in the crockpot

Ingredients:
- 2 lb whole chicken
- 1 small onion chopped
- 1/2 cup mushrooms chopped
- 4 celery stalks chopped
- 1 zucchini sliced crosswise
- 2 cloves garlic
- 1 tsp dried basil
- 1/2 tsp Himalayan salt
- 1/2 tsp pepper
- 2 tbsp coconut flour
- 2 tbsp butter
- 1/2 cup coconut milk
Directions:
- Chop onion, mushrooms, celery and garlic.
- Place chicken, onion, mushrooms, celery, zucchini, garlic, basil, salt, and pepper. Cook on low for 6 hours.
- Remove chicken from slow cooker. Let cool slightly, then remove chicken from bones. Discard the bones.
- Take liquid from slow cooker and put in medium saucepan. Add 2 tablespoons coconut flour and bring to a boil.
- Cook until mixture thickens slightly. Reduce heat and add coconut milk, chicken, and butter.
- Simmer for 10 minutes.
