One Minute Muffin
Note: I’m not a fan of the microwave, in fact, I personally haven’t used one since 2012. However, I do understand that we live in a fast paced environment so it would be better to eat the below for a quick at home 5 minute lunch than some junky fast food.
One Minute Muffin
Total Cook Time: 1 minutes
Total Preparation Time: 5 minutes
Total Time to Eat: 6 minutes
Servings: 1
Ingredients:
- 1 pasture raised organic egg
- 1 teaspoon coconut oil
- 1/4 cup ground flaxseed meal or almond flour
- 1 teaspoon baking powder
- 2 teaspoon cinnamon
- 1 pack of Stevia
Directions:
- Crack 1 egg in a coffee mug Add 1 teaspoon of coconut oil Stir together
- Mix dry ingredients in a bowl:
- 1/4 cup ground flaxseed meal or almond flour 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1 pack of Stevia
- Add dry ingredients to coffee mug
- Stir well until blended.
- microwave 1 minute
- turn mug upside down and a breakfast muffin falls out!
