One Minute Muffin

Note:  I’m not a fan of the microwave, in fact, I personally haven’t used one since 2012.  However, I do understand that we live in a fast paced environment so it would be better to eat the below for a quick at home 5 minute lunch than some junky fast food.

One Minute Muffin

Total Cook Time: 1 minutes

Total Preparation Time: 5 minutes

Total Time to Eat: 6 minutes

Servings: 1

Ingredients:

  • 1 pasture raised organic egg
  • 1 teaspoon coconut oil
  • 1/4 cup ground flaxseed meal or almond flour
  • 1 teaspoon baking powder
  • 2 teaspoon cinnamon
  • 1 pack of Stevia

Directions:

  • Crack 1 egg in a coffee mug Add 1 teaspoon of coconut oil Stir together
  • Mix dry ingredients in a bowl:
  • 1/4 cup ground flaxseed meal or almond flour 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1 pack of Stevia
  • Add dry ingredients to coffee mug
  • Stir well until blended.
  • microwave 1 minute
  • turn mug upside down and a breakfast muffin falls out!
