Muffin Meatloaf

Ingredients:
- 1 1/2 lb lean ground turkey
- 1/2 cup crushed gluten free cracker crumbs
- 1 1/2 tablespoons water
- 2 tablespoons gluten free ketchup
- 2 cloves chopped garlic
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 small onion, finely chopped
- 1 egg
Directions:
- Heat oven to 350°F.
- In large bowl, combine all meatloaf ingredients.
- Spoon mixture in ungreased muffin pan.
- Spread ketchup over meatloaf.
- Bake uncovered 30 – 40 minutesDrain. Let stand 5 minutes before slicing.
