Total Cook Time: 5 -7 minutes
Total Preparation Time: 5 minutes
- 3 Eggs (1 whole egg and 2 egg whites)
- 3 large kale leaves (do not trim or remove stems)
- 1 pinch Celtic sea salt
- 1 tsp Coconut oil
- Place eggs, kale leaves and salt in blender
- Blend on high until smooth
- Heat oil in skillet over low-medium heat
- Pour egg mixture in pan
- Allow eggs to cook a bit, and then scramble with a wooden spoon
- Cook eggs to your preferred doneness.
