Gluten Sensitivity – How to Know If Gluten is the Devil?
Gluten Sensitivity, Gluten Intolerance, Gluten Free Diets and Gluten Induced Leaky Gut are all of bunch of names that basically mean, you can’t eat gluten. So what is gluten anyway? Well, gluten is a protein found in certain grains such as, wheat, barley and rye. Some people have the ability and enzymes to easily break gluten down and use it for food however, in my estimation, about 70% of the population doesn’t.
If you don’t have the enzymes to break down gluten what does that mean? Well it could mean trouble! If you can’t properly break down gluten you can have problems with intestinal inflammation. Imagine the gluten or wheat protein to be similar to a Brillo pad. Do you remember the old Brillo pads? As you could imagine steel wool would wreak havoc on the intestinal tract. In the same respect so does undigested gluten. If you can’t fully break down gluten then you are left with this harsh proteins that irritate the intestinal tract, which is a big NO-NO!
What it Looks Like
Those undigested gluten proteins can damage the microvillus of the intestines. Below you see the picture of the Mucous Membrane Lining. The fingers that protrude up are called Villi. 

Here’s a picture of one Villi. Notice that there is a blood vessel inside of it. Also notice that there are smaller cells to the outside of the blood vessel. Those are called, microvilli. They keep your blood stream safe from intestinal toxins and all other kinds of bad stuff.

Now imagine taking the one villi and laying it on it’s side; that’s what they below picture represents. You’ll see those tine protective microvilli are missing. They have been damaged by the Brillo aka undigested gluten proteins.

Gluten Intolerance
Additionally, if you are gluten intolerant, gluten can’t be digested. Instead, the partially digested gluten protein damages the protective cells and all the bad stuff gets in. When it gets into the blood stream it overloads your liver and could potentially lead to liver issues. Those toxins from the gut can deposit into your joints causing arthritis, pain and inflammation. They can also deposit into your organs
and glands and set up various autoimmune situations such as hashimoto’s hypothyroidism, thyroid problems in general, rheumatoid arthritis, Lupas and a host of other autoimmune disorders.
