Grilled Summer Vegetable Pasta


Grilled Summer Vegetable Pasta

Total Cook Time: 20 minutes

Total Preparation Time: 10 minutes

Total Time to Eat: 30 minutes


  • 2 bags of brown rice fettuccine
  •  Himalayan salt
  • Olive Oil
  • Black Pepper
  • 1 yellow pepper
  • 1 red pepper
  • 1 medium zucchini
  • 1 pint of cherry tomatoes
  • 1 cup fresh basil leaves


  • Bring a large pot water to a boil.
  • Cook the pasta according to the package directions.
  • Drain the pasta and return it to the hot pan.
  • While the pasta water is boiling, grill the vegetables.
  • Cut the zucchini in half lengthwise, brush with olive oil, season with salt and pepper and grill for 3 – 4 minutes per side. Cut into pieces.
  • Add vegetables to the pasta in the hot pot with the tomatoes.
  • Add the basil and toss.
