Egg and Veggie Muffins


Egg and Veggie Muffins

Total Cook Time: 25 minutes

Total Preparation Time: 10 minutes

Total Time to Eat: 35 minutes


  • 12 eggs
  •  1/2 cup chopped onion
  •  1/4 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  •  1/2 teaspoon Himalayan salt
  •  1/4 teaspoon black pepper
  •  1 clove garlic finely chopped
  •  1 cup organic shredded Cheddar cheese (optional and generally not recommend but included for some that are fine with dairy)


  • Preheat oven to 350 degrees
  • Lightly grease 12 muffin cups
  • Heat a large skillet over medium-high heat
  • Beat eggs in a large bowl. Stir in onion,  peppers, salt, pepper, and garlic powder. Mix in  cheese. Spoon by 1/3 cupfuls into muffin cups.
  • Bake in preheated oven until a knife inserted near the center comes out clean about 25 minutes.
