Egg and Veggie Muffins

Ingredients:
- 12 eggs
- 1/2 cup chopped onion
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped red bell pepper
- 1/2 teaspoon Himalayan salt
- 1/4 teaspoon black pepper
- 1 clove garlic finely chopped
- 1 cup organic shredded Cheddar cheese (optional and generally not recommend but included for some that are fine with dairy)
Directions:
- Preheat oven to 350 degrees
- Lightly grease 12 muffin cups
- Heat a large skillet over medium-high heat
- Beat eggs in a large bowl. Stir in onion, peppers, salt, pepper, and garlic powder. Mix in cheese. Spoon by 1/3 cupfuls into muffin cups.
- Bake in preheated oven until a knife inserted near the center comes out clean about 25 minutes.
