Do you ever get tired of the same ole chicken dish time and time again?  Do you want something easy for those busy work nights?  With warm temperatures quickly approaching, our Easy Gluten Free Curried Tofu Waldorf Salad is sure to beat the mundane!

Tofu is a most forgotten alternative to many wholesome main courses that have meat as the main ingredient.  It is a byproduct of the soybean and has many health benefits including lowering the risk of osteoporosis, cholesterol levels, anemia, and even cancer.  Also, tofu is rich in many minerals such as magnesium, phosphorus, copper, selenium, iron, manganese and calcium.  It is pack full of vitamins such as vitamin B6, K, thiamine, folate and riboflavin.

In addition, research also suggests that a low calorie, soy-based diet is beneficial in weight management and blood lipids.  We know tofu also as bean curd and it’s made by pressing condensed soy milk into blocks.  It is a fantastic source of protein, with a whopping 9.4 grams in 1/4 of a block!  Furthermore, tofu has a very neutral flavor and texture, so even the pickiest eaters are sure to fall in love.  Try incorporating it in meals such as a hearty burrito, warm and nourishing soups, or cold, crisp salads.  With it’s versatility, you’ll discover that you won’t even miss the meat!

Finally, here’s the delicious tofu recipe that our kids gave two-thumbs up!  It’s gluten free and very easy to make.  We’ve incorporated ginger, curry, apples, and walnut oil for a powerhouse of flavor.  A sure-fire, healthy hit for this Spring and Summer.  We hope you enjoy it!

Easy Gluten Free Curried Tofu Waldorf Salad

Cook Time: 0 minutes

Preparation Time: 15 minutes

Servings: 2

Ingredients:

  • 1 large red delicious or gala apple, skin on, cored and diced
  • 1 cup extra-firm tofu, drained well and patted dry. Cut into 1 inch cubes
  • ½ cup chopped celery
  • ¼ cup chopped toasted walnuts
  • ½ tbsp. flaxseeds, ground
  • ½ tsp. grated fresh ginger
  • ½ tsp. curry powder
  • ½ tbsp. walnut oil
  • Head endive, separated and washed

Directions:

  • In a large bowl, combine the tofu, apple, celery, walnuts, flaxseed, ginger, curry powder, and walnut oil.
  • Arrange endive in layers on salad plates.
  • Spoon the tofu-apple mixture a top the endive and serve immediately.
