This is a super healthy dessert that I treat myself to. It is so simple to make. Enjoy!!!
- 1 large sweet potato (baked)
- 1 banana
- 1 tsp of dark coco powder (optional)
- 1 tbsp of coconut oil
- 1 to 3 tsp of shredded coconut
Direction: Bake 1 large sweet potato. When cooked mash the sweet potato in a bowl with the banana, coconut oil and coco powder (optional). Top the mixture with the shredded coconut. If you want to get a little extra crazy top it with a little bit of organic whipped cream!
I love this dish because it is sweet and feels like I’m having a dessert. It’s especially great to have after a long workout because you are getting a boat load of potassium and minerals. In addition, after you workout the carbohydrates you eat are used to replace the sugar (glycogen) that your muscles and liver lost during the workout. In other times, if you eat too many carbohydrates they are more likely to get stored as fat. Lastly, one of the really cool things about coconut oil is it contains a type of fat called MCT (medium chain triglyceride), which is a type of fat that is normally burned and not stored by the body. The effect of MCTs on your body is to help elevate your natural metabolic rate.
