Delicious and Nutritious Cauliflower Fried Rice

Ingredients:
- 1 Bag cauliflower rice
- 2 Organic chicken breast cut into small pieces
- Gluten free Thai peanut sauce
- ¼ cup cashews
- Bean sprouts
- Fresh lime
- 1/2 cup of freshly chopped pineapple (optional)
Directions:
- In a pan, fully cook bite- sized chicken pieces in gluten free Thai Peanut sauce. Stir frequently.
- Add 1 bag of cauliflower
- Add 1/4 cup of crushed cashews
- Add 1/2 cup of freshly chopped pineapple (optional)
- Cook over medium heat for 7-10 minutes
- Place on a serving dish and then add a handful of bean sprouts and a squeeze of fresh lime
