Delicious and Nutritious Cauliflower Fried Rice

Total Cook Time: 15-20 minutes

Total Preparation Time: 10 minutes

Total Time to Eat: 20-25 minutes

Ingredients:

  • 1 Bag cauliflower rice
  • 2 Organic chicken breast cut into small pieces
  • Gluten free Thai peanut sauce
  • ¼ cup cashews
  • Bean sprouts
  • Fresh lime
  • 1/2 cup of freshly chopped pineapple (optional)

Directions:

  • In a pan, fully cook bite- sized chicken pieces in gluten free Thai Peanut sauce. Stir frequently.
  • Add 1 bag of cauliflower
  • Add 1/4 cup of crushed cashews
  • Add 1/2 cup of freshly chopped pineapple (optional)
  • Cook over medium heat for 7-10 minutes
  • Place on a serving dish and then add a handful of bean sprouts and a squeeze of fresh lime
