Crockpot Chicken Soup

Crockpot Chicken Soup

Total Cook Time: 15 minutes

Total Preparation Time: 5 hours

Total Time to Eat: 5 hours 15 minutes

Ingredients:

  • 2 lb chicken breast
  • 1/2 Tbsp Himalayan salt
  • 1/4 tsp pepper
  • 1 fresh thyme
  •  2 cloves garlic chopped
  • 1  cups organic chicken stock
  • 2 cups organic chicken broth
  • 4 stalks of celery chopped
  • 1/2 lb carrots sliced
  • 1 bag of kale
  • 1/2 Tbl fresh thyme

Instructions:

  • Place the chicken breast in the crock pot. Sprinkle the salt and pepper over the chicken.
  • Place the thyme sprigs and minced garlic on top of the chicken.
  • Pour the chicken broth into the crock pot.
  • Cook the chicken on high for 3 hours.
  • Remove the thyme sprigs and discard.
  • Shred the chicken.
  • Add the carrots, onions, celery and chopped thyme to the broth and cook on high for 2 hours.
  • In the last 1/2 hour of cooking, add the kale to the soup.
