Crockpot Chicken Soup

Ingredients:
- 2 lb chicken breast
- 1/2 Tbsp Himalayan salt
- 1/4 tsp pepper
- 1 fresh thyme
- 2 cloves garlic chopped
- 1 cups organic chicken stock
- 2 cups organic chicken broth
- 4 stalks of celery chopped
- 1/2 lb carrots sliced
- 1 bag of kale
- 1/2 Tbl fresh thyme
Instructions:
- Place the chicken breast in the crock pot. Sprinkle the salt and pepper over the chicken.
- Place the thyme sprigs and minced garlic on top of the chicken.
- Pour the chicken broth into the crock pot.
- Cook the chicken on high for 3 hours.
- Remove the thyme sprigs and discard.
- Shred the chicken.
- Add the carrots, onions, celery and chopped thyme to the broth and cook on high for 2 hours.
- In the last 1/2 hour of cooking, add the kale to the soup.
