Crockpot Balsamic Chicken

Crockpot Balsamic Chicken

  • 3 cup Brussels sprouts, halved
  • 3 cups cauliflower cut into large pieces
  • 4 boneless skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 1/4 cup organic chicken broth
  • 3 Tbsp coconut sugar
  • 12 drops of Stevia
  • 2 tbsp. organic Dijon mustard
  • 2 tsp. dried thyme
  • 2 tsp. dried rosemary
  • 1 tsp. dried oregano
  • Himalayan salt
  • black pepper
  • 2 cloves garlic, minced


  • In a large slow cooker, add Brussels sprouts and cauliflower in an even layer and place chicken on top.
  • In a small bowl, whisk together balsamic vinegar, chicken broth,  sugar, stevia, mustard, dried thyme, rosemary, and oregano. Season generously with salt and pepper.
  • Pour marinade over chicken and vegetables. Scatter all over with garlic.
  • Cover and cook on high for 5 hours.
