Ingredients:
- 3 lbs chicken breast tenderloins
- 3 bell peppers
- 3 onions, sliced
- 2 tbsp oregano
- 2 tbsp chili powder
- 2 tbsp cumin
- 2 tbsp coriander
- 6 garlic cloves, chopped
- Juice of 5 lemons
- 4 tbsp coconut oil
- Romain lettuce
- diced tomatoes
- sliced avocados
Directions:
- Combine the chicken, bell peppers, onions, spices, garlic and lemon juice in a bowl and mix well.
- If preparing ahead of time, let marinate in the refrigerator for about 4 hours.
- Heat a large skillet on medium heat and cook until the chicken is cooked through about 25 minutes.
- Put the hot chicken in a large bowl.
- Place chicken and peppers on top of lettuce leaves with diced tomatoes and / or sliced avocados.
