 Chicken Fajitas

  • 3 lbs chicken breast tenderloins
  • 3 bell peppers
  • 3 onions, sliced
  • 2 tbsp oregano
  • 2 tbsp chili powder
  • 2 tbsp cumin
  • 2 tbsp coriander
  • 6 garlic cloves, chopped
  • Juice of 5 lemons
  • 4 tbsp coconut oil
  • Romain lettuce
  • diced tomatoes
  • sliced avocados


  • Combine the chicken, bell peppers, onions, spices, garlic and lemon juice in a bowl and mix well.
  • If preparing ahead of time, let marinate in the refrigerator for about 4 hours.
  • Heat a large skillet on medium heat and cook until the chicken is cooked through about 25 minutes.
  • Put the hot chicken  in a large bowl.
  • Place chicken and peppers on top of lettuce leaves with diced tomatoes and / or sliced avocados.
