Ingredients:
- 1/4 cup coconut sugar
- 2 Tbsp of stevia powder
- 1/2 cup organic greek yogurt
- 2 large eggs
- 1/4 cup coconut oil
- 1 cup almond milk
- 1 tsp vanilla extract
- 2 ½ cups Almond flour
- 1 tsp baking powder
- 1 tsp Himalayan salt
- 2 cups fresh blueberries
Directions:
- Preheat oven to 375 degrees.
- Line muffin pan with paper cups.
- Whisk together the sugar, yogurt, eggs, oil, milk, and vanilla extract in a large bowl.
- In a separate bowl, combine the remaining dry ingredients except the berries together. Then mix into the wet ingredients until just combined.
- Fold the fresh blueberries into the muffin batter.
- Scoop into muffin pan and bake for 25 to 30 minutes or until a toothpick inserted comes out clean.
